The Domaine is located in Maligny, just a few miles north of Burgundy’s famous Chablis village.ĭomaine Jolly consists of 42 acres of Petit Chablis, Chablis and Chablis 1er Cru Fourchaume. With four generations of experience, Domaine Jolly is known for producing traditional, mineral-driven Chablis wines. Now under the control of Denis Jolly, the estate consists of 17 hectares (42 acres) of Petit Chablis, Chablis and Chablis 1er Cru “Fourchaume.” With stainless steel cold temperature fermentation, these wines show classic Chablis character, with great minerality, superb lively fruit, and a wonderful balance of acidity. With four generations of experience, Domaine Jolly is known for producing traditional Chablis wines. Lovely citrus aromas lead way to fruit-forward flavors of fresh pear with a rounded mouthfeel. The finish is a mix of Golden Delicious apple, Bosc pear and an appetizing saline minerality mixed with notes of white flowers. This is one of the most refreshing Chablis Dampt has made recently, a welcome addition to any seafood meals such as sautéed scallops, baked flounder or roasted cod, though equally delicious with a dish like chicken tarragon.This wine is a beautiful pale yellow color tinged with green. On the palate, the wine is focused and intense with a refreshing acidity, complex mineral flavors and a beautiful balance of textures: sleek, lean and racy. Concentrated aromas of Granny Smith apple, lime and chalk waft from the glass with an added touch of seaspray. The Dampt Chablis Tradition is made from 100% Chardonnay, grown in the Kimmeridgean soils - a mix of limestone, clay and fossilized oyster shells - that the region is famous for, fermented and aged in stainless steel for 10 months. In the glass, the wine pours a light lemon with gold highlights. Once an estate completes each of the three, increasingly stringent tiers, they are awarded certification. This three-tiered system is a sustainability initiative that encourages farms and vineyards to increase biodiversity, decrease the negative environmental impact of their pesticide/herbicide use, manage their fertilizer inputs and improve their water management. Since 2019, all Dampt vineyards have received HVE Certification ( Haute Valeur Environnementale or High Environmental Value) from the French Ministry of Agriculture. They combine tradition and modernism to produce high quality, terroir driven wines for drinkers of all walks of life. In 1998, his wish came true: he retired and handed the reins over to his children. Today, Bernard's sons, Eric, Emmanuel and Hervé craft over 30 wines ranging from Grand Cru Chablis to basic Bourgougne. He was worried that he wouldn't have any land to leave his sons to continue the vigneron tradition, so in the 1980's Bernard began buying up vineyards in the hopes that his three boys would continue farming and making wine. We are sold out of the 2019 Dampt Chablis Tradition, though we will honor the sale price for the 2020 vintage.īernard Dampt is from a family of farmers who have been growing grapes in Chablis for generations.
